Bacon Cheeseburger Meatloaf

Imagine the world’s best cheeseburger…in a meatloaf. This recipe calls for three meats, two cheeses, crispy pancetta, and French-fried onions. We thought of everything!

Ingredients

  • 1 lb ground pork
  • 1 lb ground beef
  • 1 lb ground veal
  • 1 lb pancetta, cooked
  • 3/4 cups shredded Colby cheese
  • 3/4 cups shredded Swiss
  • 1/2 cup shallots, minced
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/4 cup mayonnaise
  • 1 Tbsp Worcestershire sauce
  • 1/2 tsp garlic salt
  • 1/2 tsp ground black pepper
  • 1/3 cup barbecue sauce
  • 2 Tbsp Dijon mustard
  • 1/2 cup French-fried onions

Directions

Preheat oven to 350°F.
Combine the ground pork, beef, and veal in a large bowl. Add cooked pancetta, cheeses, shallots, eggs, panko breadcrumbs, mayonnaise, Worcestershire sauce, garlic salt, and black pepper until well incorporated. Press the meat mixture into a nonstick loaf pan.
Mix together the barbecue sauce and mustard in a small bowl. Spread mixture on top of the meatloaf, reserving 2 Tbsp of the glaze. Bake for 50 minutes.
Remove from oven and spread remaining glaze on top of the meatloaf. Sprinkle French-fried onions and bake for an additional 10 minutes until the meat is cooked through.

Cook's Notes

For a fun serving idea, substitute pre-cooked French fries for the onions on top!
