Asian Slaw with Peanut-Soy Dressing

The Perfect Gourmet makes a mean pot sticker! And this recipe is the perfect complement. You might want to double the dipping sauce!

Dressing

  • 3 Tbsp rice wine vinegar
  • 3 Tbsp olive oil
  • 1 tsp sesame oil
  • 1/2 tsp lemon juice
  • 3 Tbsp creamy peanut butter
  • 1-1/2 Tbsp soy sauce
  • 1/2 Tbsp brown sugar
  • 1-1/2 Tbsp fresh ginger root, minced
  • 1 Tbsp garlic, minced

Directions

To prepare the dressing, whisk all the ingredients together in a medium-size bowl and set aside.
To prepare the slaw, combine all the ingredients in a large salad bowl. Toss with the dressing just before serving.

Slaw

  • 1 cup red cabbage, thinly sliced
  • 3 cups Napa cabbage, shredded
  • 3/4 cup carrots, julienned
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup red bell pepper, thinly sliced
  • 1/3 cup snap peas, julienned
  • 1/4 cup green onions, julienned
  • 1/4 cup fresh cilantro, chopped
  • 1/2 Tbsp sesame seeds, toasted (optional)

Cook's Notes

Follow the package instructions when making the pot stickers. If you're using the dressing as dipping sauce, double the recipe. Otherwise you'll be left wanting more!
