Square off the top and bottom the watermelon, being careful not to cut too deeply. Next, cut in half evenly and scoop out the pulp. The two halves will be your serving vessel for the cocktail.
Add the watermelon to the bowl of a blender or food processor, purée until smooth. Strain the mixture to remove any chunks. Use immediately or place the watermelon juice in an airtight container and store it in the refrigerator for up to 3 days.
Fill cocktail shaker and carved out watermelon halves with ice, measure out ingredients, add to the shaker and give the mixture a few vigorous shakes. Divide cocktail into watermelons and garnish with mint sprigs.
Experiment with a variety of your favorite spirits, or without. You may have to adjust the level of citrus if you omit the spirits.
