New Jersey Breakfast Disco Fries

Serves: 3-4

Ingredients

  • 1.5 lbs. of frozen French-fries
  • 1 (2.64-oz) package of country gravy mix prepared to package instructions
  • 1/2 lb. white American cheese, shredded
  • 1 (6-oz) package of porkroll cut in half then into 1/4 strips and browned per package
  • 1 Tbsp yellow mustard
  • 1 Tbsp butter
  • 2 eggs
  • 1 Tbsp chopped chives
  • Vinegar-based hot sauce

Preparation

Cook French fries per package instructions.

While fries are cooking, prepare the country gravy mix per package instructions. Once it is beginning to thicken, add the cheese and mustard to the cream sauce, reduce heat to low, and whisk continuously till smooth. Keep warm.

Heat a frying pan over medium heat. Add 1 Tbsp butter. When the butter is melted, crack the eggs into the pan. Cook until the whites are set, but yolks are still runny, about 2 to 3 minutes.

On a large plate or platter, spread out the prepared French fries. Top the fries with the cooked pork roll.

Liberally pour the cheese sauce over the fries, reserving some for dipping on the side.

Top with the sunny-side-up eggs, chives, and a few dashes of your preferred vinegar-based hot sauce.

Serve immediately.

Cook's Notes

The eggs can be prepared any way you like. Switch up the sunny-side-up eggs for over easy or even scrambled!
