Carefully remove the egg yolks and place in a medium mixing bowl. Set the whites of the eggs on a serving tray.
Mash the egg yolks with a fork. Stir in the mayonnaise, mustard, salt and pepper, and mix until combined. Add the diced tomatoes, chopped bacon and chicken, and stir. Then fold in the diced avocado.
Using a spoon or pastry bag, add the filling to the center of each egg white.
Garnish with blue cheese crumbles and chopped romaine lettuce, and serve.
To save on prep time, buy hard boiled eggs before starting.
