Sausage sandwiches are a popular Italian street food. This recipe is quick and an absolutely delicious main dish for a weeknight or casual entertaining.
Preheat a barbecue or indoor grill to medium-high.
Sauté the onions in a medium-size skillet over medium-high heat until slightly wilted. Add the peppers and cook for an additional 8-10 minutes.
Meanwhile, cut the sausages lengthwise and place them on the grill. Cook thoroughly until brown on all sides.
To make sandwiches, place two slices of mozzarella cheese inside each bun followed by a sausage. Top with the onions and peppers.
Make extra onions and peppers because they’re delicious for next-day sandwiches. All colors and varieties of peppers can be roasted either whole or cut into pieces. If you wish to peel them, remove the peppers from the grill once the skins are blackened and place them in a closed paper bag. The charred skin will slip off easily.
