Watermelon Cosmopolitan

I know…the end of summer is drawing near. But let's make the most of it with this cocktail. You grab the fruit and ask friends bring the alcohol. I'll bring the blender.

Ingredients

  • 1 mini watermelon, seedless
  • 1 cup vodka, chilled
  • 1/4 cup triple sec, chilled
  • 1/3 cup Cointreau, chilled
  • Juice of 3 limes
  • Sugar cane sticks (optional garnish)
  • Mint sprigs (optional garnish)

Directions

Remove the skin off the mini watermelon with a knife or vegetable peeler. Slice the watermelon pulp into 2" pieces. Place all of the pulp into a blender and blend until smooth.
Add the chilled vodka, triple sec, Cointreau, and lime juice to the blender and mix until completely incorporated.
Pour the prepared mixture into chilled cocktail glasses. Garnish with sugar cane sticks and a sprig of mint, if desired. Serve immediately.

Cook's Notes

Want to make a party-sized portion of this drink? Use a regular-sized seedless watermelon, increase the remaining ingredients, and use the watermelon rind as a serving bowl. Toss when empty. Easy!
