Tiramisu for Two

Serves: 2

Ingredients:

  • 8 oz hot water
  • 4 tsp instant espresso
  • 1 Tbsp coffee-flavored liqueur
  • 4 (3.25-oz) cups of vanilla pudding snack cups
  • 8 oz mascarpone cheese (softened)
  • 1/2 tsp orange zest
  • 1/2 Tbsp ground espresso powder
  • 1/2 tsp cocoa powder
  • 9 lady finger cookies (cut in half)
  • 2 (10-oz) trifle glassware or 2 (10-oz) ramekins
  • 1/4 cup milk chocolate shavings for garnish

Preparation:

Dissolve the instant espresso in 8 oz of boiling water, add coffee-flavored liqueur, and let chill.

While espresso is cooling, whisk together the vanilla pudding, mascarpone cheese, and orange zest in a medium bowl. Let chill in the refrigerator for 25 minutes.

In a small bowl, mix together the ground espresso and cocoa powder and set aside.

Once the espresso and coffee-flavored liqueur mixture is cold, take the lady fingers that are cut in half and soak them on both sides. Be careful not oversaturate them to prevent them from becoming mushy.

Lay three pieces of lady fingers along the bottom of each glass.

Spoon about 1/4 cup of the pudding mixture on top of the lady fingers and sprinkle a 1/4 tsp of cocoa/espresso mix on top of the pudding. Repeat these steps twice, ending with the pudding mixture on top.

Place tiramisu trifles in the refrigerator and let them sit for 45 minutes.

Remove from the refrigerator and garnish with chocolate shavings.

Cook's Notes

To make without alcohol, simply omit the coffee-flavored liqueur.
