Pineapple Stuffing

Pineapple Stuffing

Serves: 6–8

Ingredients

  • 12 each Hawaiian rolls, cut into 1-inch pieces
  • 1/2 cup butter, room temperature
  • 1/2 cup sugar
  • 4 eggs
  • 1 20-oz can crushed pineapple
  • 8 oz smoked gouda, rind removed and grated

Preparation

Preheat oven to 350°F.

Spray a 2–2 1/2 quart baking dish with cooking spray.

Cream the butter and sugar in a stand mixer fitted with a paddle.

Add the eggs and mix until incorporated, scraping the sides once or twice.

Add the pineapple and mix. Place the cut-up Hawaiian rolls in a large bowl.

Add the pineapple mixture and fold together the ingredients.

Add the cheese and fold together until the cheese is evenly distributed.

Bake in the oven for 45 minutes. Remove from oven and let set for 5 minutes before serving.

Cook's Notes

If you do not want the Gouda cheese, simply omit it from the recipe.
