Chicken & Waffle Tacos

Ingredients

  • 10 frozen waffles
  • 20 frozen chicken tenders
  • 1 green apple, sliced into thin match sticks
  • 1 lime, juiced
  • 1 pint of cherry tomatoes diced
  • 2 Tbsp of maple syrup
  • 1/4 cup small diced red onion
  • 1 Tbsp chopped fresh cilantro
  • 3 Tbsp Sriracha hot chili sauce
  • 1 cup of mayonnaise
  • 1/3 cup shredded purple cabbage, for garnish

Preparation

Prepare the waffles and chicken tenders per the package instructions.

In a small mixing bowl, toss the matchstick apples with the lime juice. Set aside.

Then, mix the diced cherry tomatoes, maple syrup, red onion, cilantro, and apples together in a bowl.

Next, in a small bowl, combine the Sriracha and mayonnaise.

Drain the apple and tomato mixture.

To assemble, smear the Sriracha mayonnaise on a waffle and top with 2 chicken tenders.

Add a heaping spoonful of the apple tomato salsa. Sprinkle the red cabbage on top to garnish. Repeat until all tacos are assembled and serve.

Cook's Notes

Roll out your waffles with a rolling pin when they come out of the toaster oven to make them flat, so you have more space to work with.
