Cadet Dinner

Serves: 6–10

Ingredients

  • 20 oz. frozen broccoli cuts
  • 8 chicken breasts
  • 1 medium-size jar sliced mushrooms
  • 2 cans cream of chicken soup
  • 1 cup mayonnaise
  • 3/4 cup lemon juice
  • 3 Tbsp curry powder
  • 3/4 cup cooking sherry
  • 2/3 cup shredded cheddar cheese
  • 1 cup graham cracker crumbs
  • Parsley

Preparation

Preheat your oven to 375°F.

Arrange the broccoli in the bottom of a 9" x 13" baking dish.

With kitchen scissors, cut the chicken into large, fork-size chunks and place them on top of the broccoli. Drain the mushrooms and layer them on top of the chicken. Use a whisk to combine the soup, mayonnaise, lemon juice, curry powder, and sherry. Pour the sauce over the chicken. Sprinkle with cheese.

Combine the graham cracker crumbs, parsley, and butter and sprinkle the mixture on top of the casserole. Bake for 35 minutes, or until heated and bubbly.
