Be My Date Bacon Bites

Serves: 16 bites

Ingredients

  • 8 slices of bacon, cut in half
  • 1/2 cup maple syrup
  • 1/2 Tbsp bourbon
  • 16 dates, pitted
  • 4 oz goat cheese, room temperature
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1 Tbsp fresh thyme, chopped
  • 16 wooden toothpicks

Preparation

Preheat oven to 350°F.

Lay out 16 strips of bacon on a sheet pan or a large plate. Set aside.

Line a baking sheet with parchment or foil. Set aside.

Combine maple syrup and bourbon in a small saucepan and place over medium heat until it comes to a boil. Stir for another minute and remove from the heat.

Brush the bacon on both sides with the maple bourbon glaze and set aside. This way it will marinate while you stuff the dates.

Combine goat cheese, salt, pepper, and thyme in a small bowl. Using a small spoon, fill each date with about a half tablespoon of the mixture.

Wrap each date in the marinated bacon and secure with a toothpick. Place on the lined baking sheet and bake for 6 minutes. Then carefully turn each date over and bake for another four minutes.

Remove from the oven, allow to cool slightly, and enjoy these bites with your favorite date!

Cook's Notes

For a lower-sugar alternative, you can substitute the maple bourbon glaze with a low-sugar maple syrup.
