Bacon & Banana Turnovers

Serves: 2–4

Ingredients

  • 4, 5x5” squares frozen puff pastry
  • 6 Tbsp peanut butter
  • 1 large banana, sliced
  • 2 slices bacon, cut in half, cooked
  • 2 eggs
  • 1/3 cup chocolate hazelnut spread

Preparation

Line a baking sheet with parchment paper and lay out the four squares of puff pastry.

Spread the peanut butter on each sheet of puff pastry, leaving a 1/4” border.

Then place 4 to 5 slices of banana on top of the peanut butter.

Place a piece of the cooked bacon over top of the bananas.

Whisk the 2 eggs together in a small bowl. Brush the outer edge of each puff pastry square with the egg wash and fold one corner over to the other corner to form a triangle. Gently secure the seam with your fingers and then pinch the edges using a fork.

Brush the outside of each turnover with the egg wash.

Bake for 10 to 12 minutes.

While the turnovers are baking, place the chocolate hazelnut spread in a microwave-safe bowl. Heat for 30 seconds and take your turnovers for a dip!

Cook's Notes

This recipe may be made a few days ahead of time and placed in the freezer covered in plastic wrap. Also, with the leftover puff pastry dough, you can egg wash it and sprinkle with cinnamon and sugar for an extra-sweet treat.
