Ants on a Log (with a Twist)

Enjoy this updated version of Ants on a Log as a snack, appetizer, or side dish.

Prep Time: 15 minutes

Serves: 4–6

Ingredients:

  • 2 cups cooked chicken, finely chopped
  • 1/2 cup mayonnaise
  • 1 Tbsp dry ranch dressing mix
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1 tsp lemon juice
  • 1/3 cup chopped scallions
  • 1/3 cup shredded cheddar cheese
  • 1 bunch celery hearts
  • 1/2 cup chopped cooked bacon

Preparation:

In a medium-sized bowl, mix the chicken, mayonnaise, ranch dressing mix, salt, pepper, and lemon juice until combined. Fold in the scallions and cheddar cheese. Cover and refrigerate for 1 hour.

Meanwhile, wash and dry the celery. Carefully peel the outside of the celery stalks to remove the stringy fibers. Cut the celery stalks into 6" pieces.

Fill the inside of the celery with the chicken salad and top with the bacon pieces to make the “ants”.

Cook's Notes

Before filling, gently peel the outside of the celery to remove the stringy fibers.
