Smoky Pumpkin Deviled Eggs

Ingredients

  • 6 packaged hard boiled eggs
  • 2 Tbsp mayonnaise
  • 2 Tbsp Greek yogurt
  • 4 Tbsp pumpkin puree
  • 3/4 tsp kosher salt
  • 1 tsp pumpkin spice
  • 1/4 tsp cinnamon
  • 1 Tbsp maple syrup
  • 3/4 tsp chipotle powder
  • 1 chive (cut into 1/2 in. batons)

Preparation

Cut eggs in half, remove yolks, and carefully rinse the whites, then reserve.

In a separate small mixing bowl, pass the yolks through a strainer, add remaining ingredients, and whisk until smooth. Place the mixture into a piping bag fitted with a star tip and pipe into reserved egg whites.

Garnish each with a chive baton.

Cook's Notes

If you are concerned about the heat from the chipotle powder, substitute it with smoked paprika.
