This warm, hearty dinner treat is affordable and crowd pleasing…not to mention, fast!
Add the oil and stew meat in a pressure cooker and season with salt and pepper. Set the cooker to the ''brown'' setting and cook thoroughly.
Add the onion, tomato juice, salt, and pepper, to taste, and the garlic powder. Stir and pressure cook for 15 minutes.
Add the carrots, celery, Swiss chard, salt, to taste, Worcestershire sauce, and water. Pressure cook for another 15 minutes.
Remove the meat and vegetables from the cooker with a ladle and keep warm. Measure out two cups of broth from the bottom of the cooker.
Add one cup of rice and pressure cook for 8 minutes, or until fluffy. Serve the rice in a bowl and ladle the meat, vegetables, and broth over it.
Use a very inexpensive cut of meat...pressure cooking naturally tenderizes meat.
