Strawberry Shortcake Dip

Serves: 8 to 10 people

Ingredients

  • 1/2 lb strawberries, quartered
  • 1 tsp granulated sugar
  • Pinch of salt
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/4 tsp vanilla extract
  • 4 oz cream cheese
  • 1/3 cup strawberry preserves
  • 3 lady fingers cut into quarters
  • Vanilla wafers for dipping

Preparation

In a small bowl, mix the strawberries, sugar, and salt; set aside. In a stand mixer fitted with the whisk attachment or using a hand mixer, begin whipping the cream.

Once the cream begins to become aerated, add the powdered sugar and vanilla, and continue to beat until medium stiff peaks; set aside. Again, in a stand mixer with whisk attachment or using a hand mixer, beat cream cheese and strawberry preserves until smooth. Fold the whipped cream into the cream cheese mixture until thoroughly combined, then take half the amount of strawberries and the lady finger pieces and fold them in. Allow to rest in the refrigerator for 20 minutes to allow the lady fingers to soften.

Place dip into a serving bowl and spoon the remaining strawberries on top. Serve with vanilla wafers.

You can substitute store-bought, dairy-free whipped topping for the homemade whipped cream.
