Edamame Hummus

  • 2 cups frozen edamame, thawed
  • 6 Tbsp lemon juice
  • 1/4 cup green onion, chopped
  • 1/4 cup miso paste
  • 1/4 cup tahini
  • 1/4 cup tahini
  • 3 tsp light soy sauce
  • 2 cloves garlic, peeled
  • 1 tsp sriracha hot sauce
  • 1 tsp grated ginger
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 6 Tbsp extra virgin olive oil

Combine all ingredients, except the olive oil, in a KitchenAid 3.5-cup food chopper work bowl. Set to puree and process while adding olive oil through the drizzle basin until the oil is incorporated. Scrape the sides and bottom of work bowl and process for 3 minutes or until smooth.
