Salsa Verde de Tampico
Prep time: 10 minutes. Makes 1-1/2 cups.
3 fresh jalapeños, stems removed, halved crosswise, and seeded
3 tomatillos, peeled and halved
1 medium yellow onion, quartered
5 garlic cloves, peeled and coarsely chopped
1/4 cup canola or olive oil
1/2 cup loosely packed cilantro leaves
1 tsp dried Mexican oregano, crumbled
Place all ingredients into the Vitamix container in the order listed and secure lid. Select Low speed. Use the On/Off switch to quickly pulse until chopped to a slightly coarse consistency, using the tamper to press the ingredients into the blades.
