The steel itself to the weight distribution of this Santoku! I tested out the quality of the cuts with an onion and was able to slice very thing slices with smooth control! I plan to cut fish next to test its controlled cuts! Great investment of a knife!

Rated 5 out of 5 by from East meets west with this Morimoto Special edition rocking santoku. Produced in Seki Japan, using imported Zwilling special formula German steel, makes for a blade that is forceful yet not as brittle as some of the harder Japanese steels. In addition the handle is a tradition German style which contours the hand, and allows for a familiar grip. The angle is set at 12.5 degrees which is used in Japanese cutlery, making the blade sharper than the European counterparts. The traditional half bolster, allows sharpening and cutting using the full blade because there is no interference from the bolster. The rocking santoku has a great blade shape, which dips down at the tip, allowing the user to use either the rocking or chopping motion when cutting, which adds to the versatility. This knife is perfect for a new wannabe chef!
