Uses: Le Creuset 3.75-Quart Cast-Iron 2-in-1 Pan with Grill Lid
2 cups milk
1 stick (8 Tbsp) butter
2-1/4 cups all-purpose flour
1-1/2 tsp salt
1/8 tsp cinnamon
1-1/2 Tbsp sugar
1-1/4 tsp instant yeast
1 tsp vanilla extract
3 Tbsp butter
Warm maple syrup, garnish
Sliced fruit or berries, garnish
Powdered sugar, garnish
Warm milk and butter in the Le Creuset saucepan base until butter is melted. Remove from the heat and let cool until just warm, but still melted.
Whisk dry ingredients, including yeast, together in a large bowl. Gradually mix in the warm milk and butter, whisking until smooth. Mix eggs and vanilla together, then add to the batter, and whisk until smooth and incorporated. Scrape down the sides of the bowl, cover it with plastic, and refrigerate overnight.
Remove batter from fridge, turn oven to 200°F, and preheat the Le Creuset grill pan over medium heat. Lightly oil grill pan.
Stir batter to recombine; it will deflate slightly. Add about 1/2 Tbsp of butter to the pan (it should foam but not burn), then add 3/4 cup batter to the pan. Cook until bottom is golden brown and the outer edge starts to firm and bubbles form, about 3 minutes. The top will still be raw. Carefully slide a spatula under the waffle, flip once, and cook until brown on second side, about 2 minutes more.
Remove the waffle to a sheet tray and keep warm in the oven, allowing it to continue to crisp. Repeat the same process when cooking the remaining waffles. Serve with maple syrup, fruit or berries, powdered sugar, or your favorite garnish.
