Separate the egg whites and egg yolks. Keep the egg yolks in a bowl off to the side. Using a mixer, whip the egg whites for a couple minutes until you have a very peaky meringue.
Add the cream cheese to the bowl with the egg yolks. Mix very well and then add in the baking soda. While the egg whites are still in the mixer, pour the egg yolk/cream cheese mixture and the salt and pepper into the egg whites. Blend gently. Place 2 big tablespoonfuls onto baking sheets and bake them for 25 minutes.
Feel free to play with the sizes of your oopsies, depending on what you're making (i.e., hot dogs, sandwiches, etc.). I use a silicone baking board when I make my "oopsies" and that works great. Feel free to use a little spritz of cooking spray on your baking sheet to help remove them when you're all done.
