When a friend brought over a fresh bushel of sweet cherry tomatoes the other day, I knew I had to do something special with them! After searching for the perfect tomato tart recipe, I came up with my own version. It's easy to make and you probably have most of the ingredients in your home.
2 oz grated Parmesan
2 oz cream cheese, room temperature
1/4 cup mayonnaise
1/4 cup red onion, diced
1 tsp basil, fresh or dry
Freshly cracked black pepper, to taste
1 pre-made frozen pie crust, room temperature
1 cup cherry tomatoes, halved
1 egg, whisked
Preheat the oven to 375°F.
Make the filling in a bowl. Stir together the Parmesan, cream cheese, mayonnaise, onion, basil, and pepper until well combined. Set aside.
On serving platter, roll out the pie crust. Spoon the cheese filling in the center, spreading
the mixture out evenly, within 2" of the outside edge. Place one layer of cherry tomatoes over the cheese mixture. Fold the edge of the dough over the tomatoes. Brush the crust with the egg.
Bake 50 to 60 minutes, or until the crust is golden. Serve warm or at room temperature.
