Crisp & Crunchy Apple Slaw
- 3 small Granny Smith apples, peeled, cored, and cut into wedges
3 Tbsp fresh mint, chopped
2 Tbsp fresh lemon juice
1 Tbsp sugar
1/2 tsp grated lemon peel
Salt and freshly ground black pepper, to taste
- Assemble KitchenAid food processor attachment with julienne disc and attach to stand mixer. Julienne apples on medium-high speed into medium bowl.
Add mint, lemon juice, sugar, and lemon peel. Season with salt and pepper. Combine all ingredients in medium bowl. Toss gently. Serve immediately.
Note: Slaw may be prepared up to 4 hours in advance. Add mint just before serving.
