Preheat a 3-qt saucepot on medium-low heat. Add the oil and onions and sauté, stirring occasionally until translucent, 3 to 5 minutes.
Add the salt, black pepper, sweet potatoes, and vegetable broth. Bring to a boil, reduce the heat to medium-low, and cook 20 to 25 minutes or until the sweet potatoes are fork-tender.
Remove from heat and cool to room temperature.
Place the cooled sweet potato mixture into the 32-oz Nutri Ninja cup. Select Auto-iQ Blend.
Place the puréed sweet potato mix back into saucepan. Stir in the light cream and simmer until heated through.
