- 1 cup sugar
- 1 cup water
- 20 mint leaves
- 4 cups ice
- 1/2 cup bourbon (optional)
- 1 cup minty simple syrup
- 2 Tbsp lemon juice
- Mint leaves (optional garnish)
- To prepare the minty simple syrup, place the sugar, water, and mint leaves in a small saucepan and bring the mixture to a boil. Allow it to boil for 2-3 minutes, or until the sugar dissolves. Strain the simple syrup. Set the pan aside to cool.
- Put the ice, bourbon, simple syrup, and lemon into a blender and pulse until smooth and slushy. Pour the drink into a goblet or high ball glass and garnish with mint leaves, if desired.
