1 day-old loaf French bread, crusts removed and torn into bite-sized pieces
5 large eggs
1 cup half & half
1/2 cup Monterey Jack cheese, cubed
1/2 cup feta cheese, cubed
1/4 tsp ground nutmeg
1/2 tsp salt
1/4 tsp black pepper
1 cup cooked spinach, drained (about 6 cups fresh)
Coat a round 9" baking pan with vegetable cooking spray. Place the torn bread into the pan. Set aside.
Place the eggs, half & half, Monterey Jack cheese, feta cheese, nutmeg, salt, and pepper to the 32-oz Nutri Ninja cup. Pulse 5 times, using short pulses. Add the spinach and pulse 2 more times, until incorporated.
Pour the spinach and egg mixture over the bread. Place into the fridge for 4 hours to allow the egg mixture to soak into the bread.
Preheat oven to 350°F. Bake 20 to 25 minutes, until puffed and golden brown. Serve hot.
