2 scallions, green parts only, cut into 1/2" pieces
6 oz salmon filet with no skin, cut into 1" cubes and slightly frozen in freezer for 10–15 minutes to firm up
1/2 cup plain low-fat yogurt
1 Tbsp fresh dill, finely minced
1 tsp horseradish (optional)
Place wet container on motor base and secure lid. Remove lid plug. Select Variable 1. Turn machine on and slowly increase to Variable 3. Drop in onion. Once it is chopped, turn machine off.
Add rest of ingredients above, up through the salmon, and secure lid. Select Variable 1. Turn machine on and slowly increase to Variable 6–7. Use the tamper to press the ingredients into the blades. Process for 10–20 seconds or until desired consistency.
Form into patties and sauté in a nonstick pan until cooked through.
Combine yogurt, dill, and horseradish and serve as garnish.
