What is Dry Ice?

Dry Ice is another term for solid carbon dioxide. You know that carbon dioxide ("CO2") is the gas we exhale every time we breathe. When CO2 gas is compressed, it changes to CO2 solid.

Why do we use Dry Ice?

Dry Ice is very cold. In fact, its surface temperature is approximately -110°F, much colder than regular ice, which has a surface temperature of 32°F. Because Dry Ice is so cold, it is an excellent refrigerant to keep perishable food products cool until they arrive to you, the customer.

Why wasn't any Dry Ice remaining when my package arrived?

Dry Ice has special properties that are much different than regular ice. This is due to the chemical differences between water and CO2. Ice will melt to liquid and then evaporate as a gas. Dry Ice skips the liquid phase and changes from a solid directly to a gas. This change is called "sublimation." The dry ice used in the food products we offer usually lasts between 24 to 36 hours. Since we ship our products in 2 days, it is common for little or no dry ice to remain by the time you receive your package. However, your food will still be cold - ready to be put right in your freezer!

Who would ever think that a housewife from Albany, Georgia with no formal training in food would become one of the country’s most beloved celebrity cooks? Every day, hordes of fans from all over the country line up outside of Paula Deen’s restaurant, Lady & Sons, in Savannah, GA hoping to get a peek of the Food Network’s most approachable chef. This lively Southern woman with piercing blue eyes is proof that dreams can come true. With her best selling cookbooks, entertainment magazine, hit show Paula’s Home Cooking, and the launch of her new show Paula’s Party,it’s easy to see that there is no stopping this woman’s success.

Living with agoraphobia for 20 years and experiencing a crumbling marriage, Deen was left with two growing sons and no source of income. With no education and very little to fall back on, the then-42-year-old housewife reached deep into her Southern roots and drew inspiration from what she knew best – her kitchen stove. Her culinary career began in June of 1989 out of her kitchen with The Bag Lady, a home-based lunch delivery service in Savannah. The woman with the big dreams would whip up tuna fish sandwiches wrapped in Saran Wrap and have her two sons sell them to local businesses. Within two years, The Bag Lady grew too much for a home-based operation, and she eventually opened her first restaurant on Savannah’s Southside called The Lady. In 1996, after five successful years, Deen was ready for yet another challenge and launched her second restaurant The Lady & Sons,which to this day serves thousands of Savannah visitors, including celebrity clientele.

In 1997, Deen published her first cookbook, The Lady & Sons Savannah Country Cookbook. As luck would have it, a major publishing house picked it up when one of their literary agents walked into the restaurant to escape a rainstorm. She picked up the cookbook and immediately realized its potential. Shortly after that, Deen’s cookbook career was off to an impressive start with promotional appearances on QVC, where it quickly became one of the best-selling cookbooks. By then, Deen’s career seemed to have no limits. In the years that followed, she published numerous other cookbooks, including The Lady & Sons Too!, The Lady & Sons Just Desserts, Paula Deen & Friends Living It Up Southern Style, and Paula Deen Classics. On October 24, Simon & Schuster will release Deen’s sixth cookbook, Paula Deen Celebrates.

Paula’s Home Cooking premiered on the Food Network on November 16, 2002. The program features Deen doing what she does best – being herself, teaching people how to bring joy into their kitchens and homes. With Deen, it’s about teaching viewers to bring out the best in their families and creating happy memories no matter what the budget.

This fall, Deen is launching her second program on the Food Network and taking it to a new level by inviting guests to participate in her cooking classes. Paula’s Party premieres in late October and features the silver-tressed wonder being playful and interacting with her audience. Needless to say, with Paula’s Party,viewers will have an inside view into what makes Deen so special – a clever wit, hearty laugh, and shear genius at making people feel good.

Deen appears regularly on “The Today Show,” “Good Morning America,” “The Oprah Winfrey Show,” “The View,” and other leading programs. She recently had an opportunity to have a major acting role in Cameron Crowe’s film Elizabethtown starring Orlando Bloom, Kirsten Dunst, and Susan Sarandon.

-10 stars I have never had such a horrible ham. I rate it - 10 stars. For over 30+ years, I have ordered hams from a small producer in Vermont. Once in a blue moon I have bought Smithfield hams while in VA. But they are such a lot of work ..scrubbing, and soaking, and... Do not ask me why I thought to order this ham; This ham had a texture that I cannot even think of how to describe. Each slice had something like a 1/16" inch of fat alternated by 1/16" meat. And so on. It was leathery and dry. It was sort of like corrugated cardboard. The texture obviously was poor. I hope this makes sense to everyone. I took one bite and threw the ham out. It was inedible. Hmm, maybe a -10 is too generous. 04-25-10
OH MY GOSH!!!! You go Paula!! Great ham. Bought this for Easter, but too many people so I bought larger different ham. Ha! I am so glad I did that. I just fixed this ham today and no one is here except for me! I don't think I am going to share this with anyone else. It is the best. It is a bit salty, but thats what is soooooo good about it. I took the foil off after it was warmed up good and got it real brown on the edges. I will have no problem purchasing this ham again. Love ya Paula!!!!!!!!!!!!! 04-24-10

Delicious and Easy This ham was moist and sweet with the glaze all ready on it. I took it out of the freezer five days before to thaw and put it in the oven on Christmas Day for 90 minutes and voila! A great meal. It was perfect and even lasted for leftovers for a week. I would order again. 01-05-10
Christmas Dinner This year I was in a turmoil. It was my year to host the family Christmas Dinner and My husbands father had just gotten out of the hospital and could not travel. The family members live all over the state and travel a pretty good distance to be together. I decided to cook the dinner and take it to his parent's house about an hour and a half away from our home where we would all gather. I did most of the cooking the day before and we served Paula Deen's ham and her fabulous turkey. Everyone raved about our dinner. We have one VERY picky eater and he will only eat ham....he loved it and just went on and on about how wonderful the ham was. Everyone loved the ham and the turkey and I will order it again. GREAT Ham!! I bought this ham for Easter last year, but then got invited to go out for Easter dinner. I put the ham in my freezer and just took it out for Christmas Eve. It was delicious. I just used the leftovers for a split pea and ham soup. The only thing left of this ham was the bare bone. I will be getting another one. It was moist and very flavorful, everyone raved about it and wanted to take home the leftovers, which as you see I kept for myself. 01-03-10
Cooking instructions on glaze packet Purchased for Christmas Eve dinner for a crowd. I started to get worried days before when the thawing/cooking instructions were not readily seen on the product label. I checked on QVC website and no instructions there either. On Christmas Eve day, I finally did find the instructions for heating, which are written on the glaze packet, along with instructions on using the glaze (which is optional). The ham was great; although it did have a good amount of fat. I recommend that Smithfield put more visible preparation instructions on the product. It shouldn't be so hard for the end-user to figure out how to cook a product which the purchaser spent a significant amount of money to buy. The carving instructions are clearly visible (it's presliced?); but not the cooking instructions? 12-29-09
