Place a 3-qt saucepan over medium heat. Add the oil and sauté the garlic and onions 3 to 5 minutes, stirring until translucent.
Add the salt, black pepper, red curry paste, carrots, and chicken broth to the saucepan. Bring to a boil, reduce to medium-low heat, and cook 20 to 25 minutes or until the carrots are fork-tender. Remove from heat, add the coconut milk, and cool to room temperature.
Working in 2 batches, place half of the cooled soup into the 32-oz Nutri Ninja cup. Select Auto-iQ Blend.
Place the puréed soup into a medium bowl and continue with remaining soup. Return all pureed soup back to the saucepan and simmer until heated through.
