1 box of lasagna noodles, cooked per package directions
3/4 lb mozzarella cheese, shredded
1/2 cup of spinach
3/4 cup grated Parmesan cheese
In a medium saucepan, cook sausage, onion, and garlic over medium heat until well browned. Stir in tomato sauce and sprinkle in oregano, basil, salt, and pepper to taste.
In a small bowl, mix together ricotta with egg, basil, and oregano.
Preheat the oven to 375°F.
Assemble your lasagna. Spread the meat sauce across the bottom of your 9" x 13" baker, add slices of zucchini, then pasta, then ricotta cheese and mozzarella, then spinach and repeat. Sprinkle Parmesan cheese overtop. Cover with foil.
Bake 30 minutes. Remove foil and bake an additional 20 minutes. Cool for 15 minutes before serving.
