When the weather starts to get warmer, that means it's time to fire up the grill! I wanted to share one of our favorite summertime recipes. It's a cool version of a grilled chicken Caesar salad that I found. I tweaked it a bit to make it even easier, so you can throw it together in about 20 minutes. And since all the cooking is on the grill, there's very little cleanup afterwards!
1–1/2 lbs boneless chicken breasts
1 bottle Caesar dressing (the vinaigrette kind, not creamy), divided
1/2 cup, plus more as needed, Italian-style breadcrumbs
1 head romaine lettuce, cut lengthwise into quarters
1/4 cup Parmigiano-Reggiano cheese, shredded
Black pepper, freshly ground
Caesar croutons (optional)
Preheat the grill to medium heat.
Cut chicken into 1" cubes and toss into about 1/4 cup Caesar dressing. Then sprinkle with about 1/2 cup of breadcrumbs to coat, adding more if needed.
Thread the chicken onto skewers and cook for about 4 minutes per side, or until chicken is cooked through.
Next, take the romaine lettuce and sprinkle with a little salad dressing. Place on the grill for about 2 minutes until just slightly wilted. Place the lettuce on a plate, top with a skewer of chicken, sprinkle with more salad dressing, and add your cheese. Finish with fresh black pepper and croutons, if desired.
