Chicken Parmesan Panini

Ingredients:
- 8 slices Texas Toast or any thick-cut Italian or French bread

4 eggs

2 cups marinara, divided

1 Tbsp parsley, chopped

4 breaded chicken cutlets (use your favorite store-bought brand)

3 cups mozzarella, shredded

1/4 cup Parmesan, grated

12 basil leaves

Salad, for serving
Preparation:
- Preheat your panini press.

In a medium-size mixing bowl, beat the eggs, then whisk in 1 cup marinara and the parsley.

Preheat your chicken cutlets.

Dip all of the pieces of bread into the egg mixture, then lay flat on a baking sheet. On 4 of the slices, sprinkle on some of the shredded mozzarella and Parmesan. Place a piece of chicken on top of the cheese. Spoon some of the remaining marinara over the chicken,
followed by 3 basil leaves and more mozzarella and Parmesan. Place the other pieces of bread on top of all of the prepared sandwiches.

Spray your panini press with nonstick cooking spray and grill until the outside is lightly browned and crispy. Serve each sandwich sliced in half with a fresh salad.
